Superhero Muffins

I’ll be honest – giving you this recipe seems like a cop-out. As you can see from the lovely sunshine in the photos, I took them back in June last year. So, it seems like I’m just throwing something at you from the archives because I can’t be bothered. However, when the good folk of Rangemaster asked me to provide a healthy breakfast recipe I wanted to give you one that I ACTUALLY eat. Not one that I aspire to eat and never get around to. Yes, there are lots of lovely healthy buckwheat pancake recipes (which I’ve made a few times and are indeed good) or lots of egg-white concoctions which look promising but don’t deliver but, to be honest, something has to be really enticing to tear me away from a good, gloopy bowl of porridge made slowly over the hob in a moment of morning reflection-time. No, it’s the days when I don’t have time to sit down that I need a healthy option that I can grab and go and will help me resist the draw of the almond croissant.

Healthy and exciting breakfast ideas using your Rangemaster

Christmas has been and gone and everyone is thinking about shedding those few extra pounds that were gained over the Christmas period, but who wants to eat rabbit food for the next 3 days and then give up.  It’s important to remain positive and still enjoy your food, even when you are trying to shed those few extra pounds, one of the best ways to do this is to ensure that you are eating three healthy, exciting and different meals a day. So many people skip breakfast whether it is due to time restrictions, being disorganised or the classic excuse, “I don’t usually feel hunger in the morning”. It really important to eat a balanced breakfast to give your body energy and help start your day in a bright and positive way. Hopefully the super quick, healthy and delicious recipes that we have created here at Rangemaster, will make you excited about cooking and eating breakfast and give you lots of energy to battle through the cold winter months.

A Healthy Breakfast

Here we are the middle of January, still being bombarded with diets, exercise DVD’s, dry January and how much carbs, sugar, fat, and caffeine we should be all be consuming! The list is endless! 

I think we all know what we should and should not be eating – it basically comes down to eating less and moving more. But this does not mean that you cannot eat some of your favourite food, just eat it less often and cook it as healthily as possible!

Shake Up Your Wake Up for Breakfast Week

The 25th-31st January is officially Breakfast Week. It’s also probably about the time when all those healthy eating intentions that you had at the start of January are starting to slip. Breakfast is my favourite meal of the day and I particularly love a leisurely brunch with a good coffee and some friends (or the crossword). I recently had something similar to this at my favourite brunch spot in London and it occurred to me that while many brunch recipes are rather sugar or fat laden, this one is really quite healthy. So, I though Id see if I could re-create it. I reckon it’s got 2 or 3 of your 5 a day, the eggs provide good protein to keep you going and the yoghurt adds a tart creaminess whilst providing all the benefits that live yoghurt gives.

Christmas Breakfast

What do you normally have for breakfast on Christmas day? It’s a tough one – do you go light to leave space for extra stuffing (literally and figuratively) later on? Do you go decadent and rich? Do you wish you could go decadent and rich but really grab half a slice of lukewarm toast as the kids drag you to “see what Father Christmas brought?

 

After carefully considering the festive break-fast I thought that what would be most useful was a customisable option. Something that can be made easily and eaten either slowly in conjunction with a bucks fizz, or in a flurry of shredded wrapping paper with a mug of tea.
